You have a few options. Have a look at:

1)       Wireshark/tshark

2)       Ngrep (http://ngrep.sourceforge.net/)

3)       Voipmonitor (voipmonitor.org)

i want to know how to trace packets of sipp.
i have sipp-opensips-sipp.
i want to count number of calls per seconds.
